Lemon Bliss balls Recipe

The perfect morning snack, afternoon snack, or really any time of the day snack to give you an energy hit with a little zing!

10 minutes preparation and assembly time
Makes 10-12

Ingredients:

  • 1/3 cup macadamia nuts
  • 1/3 cup cashew nuts
  • 1 tablespoon desiccated coconut
  • 2 tsp maple syrup
  • Grated rind of ½ a medium lemon
  • Juice of ½ a medium lemon
  • Desiccated coconut

Method:

  1. Place the macadamia and cashew nuts, desiccated coconut, maple syrup, lemon rind and lemon juice in a small food processor or NutriBullet and blend until all ingredients are combined.
  2. Divide the mixture into small portions (approximately teaspoon size) and coat in desiccated coconut. Repeat until all the mixture has been used. Enjoy!
